Who we are
When Diana originally started Undercover Chocolate Co. , her goal was to make decadent chocolate covered goodies for events, gifts and holidays. She quickly realized she was shooing away her kids, and hiding all that deliciousness from herself and her husband. People would tell her how much they loved her chocolates, then take a little bite and try (as best they could) to resist overdoing it.
Diana loved the chocolates she made too — but what she really craved was the satisfaction of just enough, absolutely delicious, premium chocolate, over something healthy, light and naturally good for you.
After two of her chocolate-obsessed daughters were diagnosed with celiac disease, she became determined to make this snackable treat gluten-free too.
She experimented with every ingredient she could find — and ultimately discovered the perfect combination…

Then she added some healthy, simple ingredients to create several amazing flavors and voila…Undercover was born.

What we do
At first, she made Undercover in small batches on her own in a rented commercial kitchen. As sales quickly grew, she knew she needed to find a way to increase production. While she considered using a co-manufacturer, she ultimately decided it was extremely important to control the quality and the manufacturing process. That’s when she brought in her husband, Michael, who has decades of experience working with food manufacturers, as the Chairman of Undercover. Together they opened their own state-of-the-art manufacturing facility in East Hanover, NJ and are proud to report that they are now certified as an SQF Level 3, Kosher facility, capable of producing more than enough Undercover for the world to enjoy!
Since they manufacture their own products, they decided to ensure their facility is not only certified gluten-free, but also certified peanut and tree-nut free. As a mom whose kids can’t eat gluten, she knows how hard it is to find safe snacks, and wanted to provide that same assurance to people with other food allergies as well. Although their milk chocolate contains milk, their facility and products are free from all of the other top ten food allergens including wheat, peanuts, tree nuts, eggs, soybeans, fish, shellfish, sesame and poppy seeds.
At Undercover Snacks, they carefully source all-natural, non-gmo, simple ingredients and Rain Forest Alliance Certified chocolate. They are also committed to giving back to the community through several local and regional charities.
