Rawtella + Breakfast Wraps

by Andrea

Not gonna lie, back in the day, Nutella was one of my fave foods- I would eat it straight out of the jar (religiously) and would regularly have it in my school sandwiches- and to be frank, if nutella was a superfood, I would probably have been the most healthy fetus kid out there. But sadly to say, it’s not as healthy as we all wish it could be and in reality the majority of the spread is refined, white sugar (but of course, everything can be eaten-within moderation). But if only there could be a healthier alternative to the classic nutella spread… and BAM, here we have ‘rawtella’. Now, I know there are many versions of rawtella out there online, so I decided to give this ‘rawtella’ a try. I looked online for some inspiration on which ingredients to use to get that chocolaty taste and the finished product turned out better than expected, could eat this by the barrel! Below you’ll find how this lovely rawtella spread was created:

Ingredients:
– 150g hazlenuts (about 1 cup)
– 2 tbsp cacao powder
– 2 tbsp maple syrup
– 1 tbsp coconut oil
– ¼ cup water

Method:
1. Add all ingredients in a food processor and blend on high for about 30 mins or until a smooth, spread texture forms- this may take longer than expected, the trick is to be patient (which was pretty hard for me because the mixture smelt so good and I just wanted to have a taste of it!). Enjoy!

Toasted Rawtella Wraps

Obviously after making this delicious spread, I had to give it a try, and this wrap recipe was created! This was pretty much a last minute thing and purely the result of using whatever ingredients I had at hand but they turned out better than expected and was the perfect breakfast (but, to be honest, I would gladly have this for lunch and dinner).

Ingredients:
– 2 tbsp rawtella (or as much as you desire)
– 1 wholemeal wrap
– assorted fruit of your choice- I used nectarine, raspberries, shredded coconut, goji berries and dried pomegranate seeds but you can use whatever fruit you have at hand
– optional: maple syrup (to be used as a topping)

Method:
1. Spread rawtella on one side of the wrap and top with assorted fruit.
2. Fold wrap in half and heat it in a sandwich press or a grill for about two mins.

Enjoy!
