Just as Cajuns have the holy trinity of bell pepper, onion and celery, West Africans have the holy trinity of chili pepper, ginger and onion.
In many homes, this blend is used as a base to season stews, soups and vegetables, or used as marinades for meats, seafood, or poultry. Often supplemented with salt and other seasonings and herbs, meals are not complete without this spicy blend.
Our founder was born and raised in Ghana, West Africa to a farmer-father who taught her to how blend the West African holy trinity, and to layer flavors while cooking.

Spicy West African Chicken Recipe
If there is one thing West Africans love when it comes to their food, it is spicy heat. However, just as they love spicy heat, they equally love flavor.
Roasted or grilled chicken is a common protein enjoyed in most homes. Our Spicy West African Chicken recipe, is a play on that spicy chicken which is air roasted instead of being traditionally roasted or grilled.
Ingredients:

1/4 Cup Neutral Flavored Oil

1 Small to Medium Sized Yellow or White Onion

1 Tablespoon POKS Spices Extra Spicy Cayenne-Based Seasoning

1 Tablespoon POKS Spices Mild Jalapeño-Based Seasoning

0.5 to 1 Teaspoon Sea Salt

1 Teaspoon Basil Flakes

Chicken
Instructions:
- Blend all the ingredients except the chicken, together.
- Thoroughly rub the spicy marinade unto the chicken, including under the skin fold.
- Refrigerate seasoned chicken for at least 6 hours.
- Prepare as your would your typical chicken preparation of either grilling, baking, roasting, frying, airfrying or air roasting. Our preparation was done via air roasting in the airfyer.
