I love New Beginnings; A fresh start in the New Year. Lately, I’ve been adding more Paleo options to my “Pure Goodies” Menu. I personally live a Paleo Lifestyle, a recent and very positive change for me, and so my passion is focused in that. I do understand that everyone’s body is different, therefore each of us have to customize a food plan that fits our unique self. This being said, I am trying to offer a variety of Allergen Friendly goodies. The wonderful thing about the Paleo Lifestyle is that it can be customized to fit each individual. Whether you are Vegan, Nut Free, Dairy Free or whatever it may be… You can adapt your nutrition based on the fundamentals of clean, healthy eating!

For those who may be new to the Allergen Friendly world, The Paleo diet basically consists of eating as much Organic Foods as possible. Vegetables and Fruits, Non Factory Farmed Fish, Eggs and Meats, Nuts and Seeds, Refined and Artificial Sugar Free, High Omega-6 Vegetable Oil Free, Grain Free(rice and corn included) Dairy Free, White Potato Free, Legume Free. I love the challenge of having just a few ingredients available and creating a delicious dish that impresses the pickiest of eaters. Yes, it is possible to enjoy life and Food living Paleo!
Today I wanted to share my latest creation…

Ingredients:
1 ½ Cup Cashew Flour
¼ Cup Arrowroot
1 teaspoon Gluten Free/Aluminum Free Baking Powder
Pinch of Pink Himalayan Salt
½ Cup Lily’s Dark Chocolate Sugar Free Mini Chocolate Chips (lilyssweets.com)
3 Tablespoons Grade B Maple Syrup
2 teaspoons Vanilla Extract
1 Soy-Free Egg
¼ Cup Extra Virgin Coconut Oil, Melted

Directions:
Preheat oven to 350F. Line a rimmed cookie sheet with parchment paper. Whisk wet ingredients together. Combine dry ingredients in a separate bowl, including chocolate chips.
Add dry ingredients to wet and stir until well combined. Pour batter onto middle of lined baking sheet. It will form a circle on its own, so just leave it and place in oven to bake for 25-30 minutes. Cool on wire rack for 10 minutes and Enjoy!
