What is Clean BBQ? Salt, Pepper, and Smoke.
Matt and Bryan are doing something I haven’t experienced, they’re letting the smoke speak for itself.
They’re not in Manhattan, Brooklyn, or even in the Big Apple. These guys are smoking in a sleeper town in Jersey – and their lines are out the door, for blocks!
I met Chef Bryan, who is the right hand business partner to Matt. Matt launched a smoker outside of an abandoned hardware store and has garnered a reputation among… Well, everyone! These guys have some of the best BBQ in the Tri-State area, and all they go by is their smoker. Now Gentle Giant BBQ and Brew House houses a pivovar with 5 casks, a massive space for the family, and a castiron smoker they are maxing out at capacity.
Shortly after I met Bryan, they brought out the goods. First, the Mac & Cheese, salted only with the house cured Bacon. Second, the Brisket Taco, which I still can’t believe doesn’t have any seasoning because it tastes like it has 100 years of tradition. Third, the house made Italian chorizo-style sausage. Fourth, the Pork Shoulder (pulled pork). Fifth, the pickles, the sauces, the pork ribs, and so on.
